Book Description

Trent's Belizean Barbecue is one of many books being released, in the Mama Bear Cookbook Series.  It is a wonderful collection of barbecue recipes, ranging from appetizers to desserts, touching on the theme of Belizean and Caribbean style barbecue.

Within this 200 page book, you'll find over 200 delicious recipes, you can prepare at home, using your very own barbecue grill.      Trent has included grilling charts for various meats, instructions on how to properly cook beef, chicken, pork and fish on the grill.  There is a section on doing your own pig roast, which many may find enjoyable doing once or twice a year with family and friends.

Included in this book, is a collections of unique Belizean recipes kindly donated by Trent's wife, Marcy Diane Cueller-Turley (his Belizean Princess).  They include such things as Belizean BBQ chicken, rice & beans, cole slaw, coconut tortillas, fry jacks, Johnny cakes, Creole bread, stuffed jalapeno poppers, conch fritters, meat pies, garnaches, salbutes, panadas, stewed beef, stewed chicken, roasted ham, fish stew, black soup, cow tail soup, Belizean rum cake, tres leche cake and fresh coconut tarts.

Amidst the many wonderful recipes, are pictures near and dear to Trent's heart.  Pictures of his new little family, and his extended family to include grandparents.

This book is currently available in hard copy in many of the gift shops in Belize.  Everyone who has purchased a hard copy of this book, loves it.  If you're looking for a Belizean souvenir or gift (for that special someone), this is definitely a book to treasure.

Cookbook Dedication

Cookbook is dedicated to my son Trent.

Trent is one of five children, number three to be exact.  He was born on the kitchen floor, in a beach house in Scarborough, Maine, USA.   It was moving day and we had the truck loaded up, ready to go.  All the furniture and boxes had been packed, and we were now making one final sweep through the house before cleaning.  As I began wiping things down, my back started to hurt, and before we knew it, I was in active labor.  John pulled the mattress off the moving truck, threw it on the kitchen floor (along with a shower curtain), and 12 hours later, we had us a healthy “10 pound”, baby boy.

Trent spent his early years, living at the base of Mt. Gibb (a mountain in the Wet Mountain Valley, just shy of 14,000 feet).  By the time Trent was nine (9) years old, the family made the trek to Belize, where he currently lives today.  In the years that Trent has been in Belize, he grafted himself into the Belizean way of life.  He came to love the local cuisine (so much so), that he came up with his own barbecue sauce, literally the best sauce any of us have ever tasted.  This barbecue sauce, coupled with his love for the Belizean cuisine, is what inspired the writing of this cookbook.

Trent married a young Belizean girl, by the name of Marcy and the two of them, welcomed their first child in June of 2017.  People ask us all the time, if we’re ever moving back to the United States, and the answer is no.  We’ve come to love living on an island (in the middle of no-where), on what everyone calls “island time” (which means, it gets done, when it gets done). This cookbook is dedicated to my son Trent and his beautiful wife, two individuals who have been such a blessings in my life.

Barbecue is a great way for families to spend time with each other.  So why not grab this book, cook a few things and enjoy being together.
ALL MY LOVE..........Mama Bear

The love of a family, is one of life's greatest blessings.
