Book Description
Nani's Biscuits, Muffins & Sweet Breads is a wonderful collection of quick bread recipes, ranging from biscuits and banana muffins to delicious coffee cakes.
Included in this book are recipes on how to make a variety of biscuits from whole wheat to ham and cheese. I've included my signature recipes for banana, blueberry, morning glory, and pumpkin muffins. Highlights are chocolate cheesecake muffins, Jalapeno corn muffins, 1930's corn muffins, French toast muffins, crab stuffed muffins, pineapple upside down muffins, pumpkin, zucchini, chocolate peanut butter cheese cake muffins and a variety of egg and meat muffins. Sweet breads include banana whiskey nut bread, beer bread, bourbon nut, carrot pineapple, mango, strawberry, pecan, lemon raspberry, gingerbread, cranberry, purple plum, Pina Colada, coconut bread, Caribbean island bread, and a variety of corn breads. Included as well are notable favorites, Belizean fry jacks, sopillas, crispy bread sticks and flour tortillas. This cookbook celebrates the gift of family. Amidst all the many great recipes, are pictures of my many baby bears. The pictures remind us (of one thing that's important in life), spending time together. We think you'll really enjoy this cookbook, everyone who has seen this book loves it - including the publisher. One of the highlights of this cookbook, is the variety of muffin and quick bread recipes. There is a quick bread for just about any ingredient. If you're looking for a Belizean souvenir (something to take back home), then this is one to consider. We presently do not have these books listed on Amazon.com yet, but that will be coming soon (for those who can be patient). |
About the Author
People ask me (all the time), why do you love bears so much? My response, “Think about it! One of the first toys we are given (as a child), is a teddy bear. When we need comfort (from crying), we are handed this same teddy bear. In time, we begin to equate teddy bears, with security and comfort. Not to mention, they are big, soft, and cuddly.”
One of my favorite films growing up as a child was, “The Jungle Book”. I loved the story and I especially loved the bear (Ole’ Blu). He was a free spirit, he didn’t let life get him down, he was positive, he danced, he sang, he made the most out of any given situation, and he was especially fond of his man-cub. That pretty much describes me.
I am a natural mother to five children (three grandchildren), and I’ve adopted many children in my heart. I gave birth to all my children at home (with the exception of one). Of the ones born at home, one was born on the kitchen floor. I presently live in the country of Belize (on a small island – off the mainland coast), where we have lived for the past few years.
My children and I have enjoyed many wonderful memories and adventures together. Over the years, I have collected numerous recipes from my mother, grandmother, friends, relatives, neighbors and acquaintances. I have now compiled all these recipes in one book, to include some favorite family photos of my man-cubs.
It is my sincere desire, that you enjoy this cookbook as much as we do. Life is about “doing things together”, and cooking is one of those things – we can do together.
