Pizza Dough

GRANDMA SMITH'S PIZZA DOUGH
1 c. water (110 degrees)
1 pkg. dry yeast (or 2 tsp.)
1 tsp. white sugar
2-1/2 c. all-purpose flour
3/4 tsp. salt
2 Tbsp. olive oil + (more for your hands to work the dough)
Instructions
  • Place one cup water in a glass measure container. 
  • Add 1 tsp. white sugar to the water and mix.
  • Place in the microwave for 15 seconds.
  • Take a candy thermometer and check the temperature of your water.  It needs to be about 110 degrees.
  • Add the dry yeast and wait for it to bubble up.
  • In large mixing bowl, add the flour and salt. 
  • Gradually pour in the yeast mixture (after it has proofed), into the flour, knead and gradually add 2 Tbsp. of oil to the dough.
  • Once you get a nice workable ball of dough, add a little oil to your hands and form it into a nice ball.
  • Drizzle a little oil over the dough ball.
  • Take a separate clean large bowl, and drizzle a little oil in the bottom.
  • Place your dough ball in the bottom and cover with a kitchen towel.
  • Place in a cool oven, with the door closed to allow the pizza dough to rise and double in size (about 1-1/2 hours).
  • Punch down and allow the dough to rise a second time.
  • After the second rising, place a little oil in the palms of your hands and gently stretch the dough to fit a large pizza pan.
  • Add one cup of pizza sauce and any toppings you desire.
