Marlene's Nisua Bread

MARLENE'S NISUA BREAD
1/4 lb. butter (1 stick)
2 c. milk
1 c. white sugar
1-1/2 tsp. salt
1 pkg. dry yeast (2 Tbsp.)
1/2 c. lukewarm water (110 degrees)
2 eggs, beaten
12 ground cardamon seeds (3 tsp.)
9-1/2 c. all-purpose flour

Bread Glaze
1/2 c. water
1/2 c. white sugar
Instructions for Bread
  • Bring milk, butter, sugar and salt to a simmer (just before it boils).
  • While waiting for this, dissolve yeast in water.
  • Let both cool to luke warm.
  • To milk mixture add (3) cups flour and beat well.
  • Add yeast, ground cardamon seeds and eggs. Mix well.
  • Add enough flour to make a soft dough.
  • Turn out on lightly greased bowl.
  • Cover with wax paper then towel. 
  • Set in warm place 85 degrees, for approximately 1-1/2 hours or until double in bulk. 
  • Punch down let rise and then shape into loaves by braiding it.
  • Let rise again and place in 350 degree oven and bake for 45 minutes.
  • Makes 3 large loaves.
Instructions for Bread Glaze
  • In a small saucepan, heat the water and sugar until thick.
  • Spread this on loaves when they come out of the oven.
  • This should form a white crust if it doesn't put back in oven till it bubbles on top.

Note:  Mom place the bread in a cool oven with the door closed.  This provides a good environment for bread dough to rise, as there are no drafts.
