CROCKPOT BEANS

MAMA BEAR'S CROCKPOT BEANS
2 c. beans (kidney, pinto or black)
6 oz. butt bacon, cut into small pieces
7 c. water
1/2 c. dried onions (I like alot of onions in my beans)
1 Tbsp. minced garlic (from jar)
2 Tbsp. chicken consume
2 tsp. onion powder
2 tsp. garlic powder

Note:  Old beans will require more water to cook.

Instructions
  • Rinse your beans several times, until the water runs clear.
  • Remove any rocks or stones
  • Place the rinsed beans in a crockpot and cover with 7-9 cups of water.
  • Add your chopped butt bacon, do not remove fat. 
  • Add your dry onions, garlic, chicken consume, onion and garlic powder.
  • Set your crockpot to the low setting, and allow beans to cook 12 hours.
  • Add additional water, if they become dried out.
  • I start my beans late afternoon, and let them cook all night. 
  • Then they're ready for breakfast in the morning.
  • These are great on the side, in a breakfast burrito or any Belizean or Mexican dish.

Note:  I do not add salt, because there's quite a bit of salt in the butt bacon and the chicken consume. 

Note:  Place a small amount of the beans in the blender (with a little bit of the bean broth), and puree.  You will get a nice bean paste, to serve on any breakfast plate.

Note:  I start my beans about 6:00pm at night (set them in the crockpot on low for 12 hours) and they are usually ready by 6:00am the next morning for breakfast.  I either serve them on the side with eggs and a breakfast meat, or we blend them and spread them in a homemade tortilla for a breakfast burrito.

Cooking w/ Baby Bears

Jaymin took to cleaning beans right away.  In fact, if I tried to help him, he'd hit my hand away.  These were his beans and he was going to clean them.  Jaymin would sometimes go downstairs to Miriam's and I'd warn her. "Watch out for Jaymin in the kitchen, he will take over".  She messaged me later and said, "You were right.  He got his hands on my spoon and that was it, I needed to step back".
