Cornbread Muffins

CORNBREAD MUFFINS
1 c. yellow cornmeal
1 c. flour
1/4 c. white sugar
2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1 c. sour cream
2 eggs, slightly beaten
1/4 c. butter, melted
1 jalapeno, seeded & chopped (optional)

Instructions
  • Preheat oven to 425 degrees.
  • In a small bowl, combine sour cream, beaten eggs and melted butter; blend well.
  • Add to dry ingredients and stir until evenly blended; do not over mix.
  • Drop batter into prepared muffin tins and bake for 25-30 minutes.
  • Cool in pans for 5 minutes before removing.
  • Serve hot.
