Chocolate Cake

CHOCOLATE CAKE
2 c. white sugar
1-3/4 c. all-purpose flour
3/4 c. coco powder
1-1/2 tsp. baking powder
1-1/2 tsp. baking soda
1 tsp. salt
2 eggs
1 c. milk
1/2 c. oil
2 tsp. vanilla extract
1 c. boiling water
  • Preheat the oven to 350 degrees.
  • Grease and flour a 9x13
  • Line muffin cups baking tins, with paper liners, or spray the muffin tin with cooking spray.  Gather all ingredients that you will be using.
  • Combine dry ingredients in large bowl.
  • Add eggs, milk, oil and vanilla and beat on medium speed with an electric mixer for about 2 minutes.
  • Stir in boiling water (batter will be thin).
  • Spoon batter into prepared muffin cups, filing above 2/3 full.
  • Bake until golden brown, or a toothpick when inserted in the center comes out clean. 
  • Remove muffin pans from the oven and allow to cool on wire racks for about 10 minutes.  Use a skewer or paring knife to lift the cupcakes from the tin and transfer to a wire rack, allowing cupcakes to cool another 45 minutes, before applying frosting.
