Bacon Wrapped Stuffed Fish

6 to 8 fillets Fresh Fish (this needs to be a firm fish)
6 to 8 strips Bacon

Fish Stuffing

4 c. stale bread crumbs (we used seasoned croutons)
1 Tbsp. Savoury
pinch sea salt
pinch black or white pepper
1 small onion, grated
1 Tbsp. butter

Butter Sauce
1 Tbsp. butter
2 Tbsp. Flour
1 c. v
egetables broth or stock (more if needed)
1 c. onion, chopped (or less)
pinch sea salt
pinch black or white pepper

Fish Fillet Instructions
  • Rinse your fish fillets and pat dry and place on your counter.
  • In a bowl crush your stale bread until loss crumbs, then add  savoury, salt, pepper, butter and grated onion.
  • Mix together leaving the leftover onion for your butter sauce, after your dressing is mixed together set aside until ready to use.
  • Take one fish fillet and season with salt and pepper on both sides, then take a hand full of stuffing and add to the top, pat down and roll away from you.
  • Then take a piece of bacon and wrap around the rolled stuffed fish fillet and place in a deep pan or baking sheet with parchment paper.
  • This will help catch the oil that is released from the bacon.
  • Continue doing this until all the fish fillets are stuffed and season again with salt and pepper, optional.
  • Place in a pre-heated oven of 350º-375º for 30 to 45 minutes, depending on your oven and when the bacon is a golden brown.
  • Remove from heat and pour butter sauce over fish. 
  • Serve with homemade bread and veggies of choice.

Butter Sauce Instructions
  • In a frying pan, over medium heat, add butter, chopped onions and start to fry.
  • Then add a pinch salt and pepper, after the onions have started to cook or soften then add flour.
  • Stir around in pan until cooked, then add vegetable stock or broth and mix around until the butter starts to thicken.
  • Then turn heat down to simmer.
  • Pour sauce over fish, just before serving.
