"Mama Bear" Pancakes

MAMA BEAR MASTER MIX
2 c. dry buttermilk powder
1/2 c. white sugar
6 tsp. baking soda
8 c. all-purpose flour
10 tsp. baking powder
2 tsp. salt
Instructions
  • In a large bowl, combine all ingredients.
  • Stir with a wire whisk until evenly distributed.
  • Pour into a 12-cup container with an air-tight lid.
  • Seal container.
  • Label with date and contents.
  • Store in a cool dry place (we suggest refrigerator), and use within 6 months. 
  • Makes 10-1/2 c. mix.
BASIC PANCAKES
1 egg beaten
1 c. water, more if desired
2 Tbsp. oi;
1-1/2 c. buttermilk pancake mix
Instructions
  • In a medium bowl, combine egg, oil and water.
  • With a wire whisk, stir in buttermilk pancake mix until blended.
  • Let stand 5 minutes.
  • Lightly oil griddle.
  • Pour about 1/3 cup batter onto hot griddle to make 1 pancake.
  • Cook until edges are dry and bubbles form.
  • Turn with a wide spatula.
  • Cook 35 to 45 seconds longer until browned on both sides.
  • Repeat with remaining batter.  Serve with syrup.
  • Makes ten (4-inch) pancakes
Pancake Variations
  • Blueberries - After you have poured your pancakes onto the griddle, sprinkle a few blueberries onto each pancake.
  • Chocolate Chips - After you have poured your pancakes onto the griddle, sprinkle a few chocolate chips onto each pancake.
  • Bananas - Make batter as usual.  Smash 1 to 2 bananas with a potato masher, and place in the batter (and mix), prior to pour into the griddle.
