ORANGE WALK TACOS

ORANGE WALK TACOS
Corn tortillas
1 whole chicken
2 Tbsp. chicken consume
10-12 c. water
12 tomatoes
2 onions
1/3 c. lime juice (3-4 medium limes)
5-6 garlic cloves, crushed
2 jalapenos whole (optional) remove after meat is done
1 habanero whole (optional) remove after meat is done
Season Meat to taste (consume, onion & garlic powder)

HABANERO SAUCE
3 tomatoes, roasted
1 habanero, roasted
1 medium onion, diced
1/4 c. fresh lime juice (2-3 medium limes)

CILANTRO ONION RELISH
2 bunches cilantro, washed & chopped
1 medium onion, diced small
1/3 c. vinegar
1 med. lime juice
1 tsp. salt (to taste)

SERVE w/ ROMEN'S ONION RELISH
Instructions - Taco Meat
  • Wash your chicken very good, using white vinegar and fresh lime.
  • Place the whole chicken into crockpot and add 10-12 cups water.
  • Add 2 tablespoons of chicken consume to the water.
  • Cook for 3-4 hours on high (or) 8-9 hours on low. 
  • Chicken is done, when it falls off the bone.
  • Remove bones, and chicken meat from crockpot.
  • Shred chicken meat and return to crockpot and set aside.
  • In a blender, add 12 tomatoes (chopped), 2 onions (chopped), lime juice and garlic cloves.
  • Run blender until all ingredients are pureed into a semi-thick sauce.
  • Pour the tomato sauce into the crockpot containing the shredded chicken.
  • As an option, to give your meat an extra kick, add 2 whole jalapenos and one habanero.
  • Cook another 3-4 hours on high (or) 8-9 hours on low.
  • Be sure to taste test before serving, and add any additional seasonings that are needed (i.e. chicken consume, onion or garlic powder).
  • Before serving your chicken taco meat, remove the jalapeno and habanero peppers. 
Instructions - Habenero Sauce
  • Take tomatoes and habanero pepper, place them on a metal skewer for roasting.
  • Over an open flame on your gas stove top, roast the tomatoes and pepper, until skin burns slightly.
  • Place tomatoes, habanero pepper, chopped onion, and lime juice in a blender and mix to incorporate all ingredients together.  
  • Place in a small bowl to be served with your tacos.
Instructions - Cilantro Onion Relish
  • Take two bunches of cilantro and one onion chop into small bite size pieces (or) run through a small electric chopper.
  • Remove cilantro and onion and place into a bowl.
  • Add vinegar, lime juice and salt to taste.
  • Mix to incorporate and place in a small bowl to serve with your tacos.
Instructions - To Assemble Your Tacos
  • Place a small amount of chicken meat (removing broth) on the taco. 
  • Add a small bit of onion relish and roll tortilla into a roll.
  • Place 9-12 tacos on each plate and serve.
  • Serve with habanero sauce and cilantro onion relish on the side.
