King Ranch Casserole

KING RANCH CASSEROLE
2 c. chicken, diced & cooked
1 small onion, diced

Sauce Mixture
1 can cream mushroom soup
1 can cream chicken soup
1 c. chicken broth
1 (13-14 oz.) can Rotel tomatoes, diced

8 flour tortillas
1 c. shredded cheddar cheese
Instructions
  • Preheat oven to 350 degrees.
  • Combine diced chicken and onions in deep skillet.
  • Cook on medium heat, until cooked through.
  • Combine all sauce ingredients into a bowl and set aside.
  • Oil the bottom of a 9x13-inch baking dish.
  • Place a layer of tortillas in the bottom of a greased baking dish.
  • Layer each of the above ingredients in the following sequence:
    • 1/2 tortillas
    • 1/2 chicken mixture
    • 1/2 sauce mixture
    • 1/2 shredded cheese
  • Repeat layer.
  • Bake covered for 45 minutes.
  • Cover with cheese and return to oven, uncovered for 15 more minutes.
