Crystal Shrimp

This was one of our families favorite shrimp dishes from a Chinese Restaurant in Monument, Colorado.  You prepare your shrimp, by deep frying it (then just before serving), pour over it this white creamy sauce.  It's so delicious.  We would order this every time we got take-out from the restaurant.

CRYSTAL SHRIMP
For Shrimp
Shrimp, peeled and deveined, leave the tail intact
     (for Large Shrimp (31/35 count) = 12-13 shrimp)
     (for Medium Shrimp (41/50 count)= 15-16 shrimp)
1 tsp. lime juice
1 tsp. salt
1 egg white
2 c. corn starch
oil for deep frying

Crystal Shrimp Sauce
8 Tbsp. mayonnaise
4 Tbsp. sweet condensed milk
2 tsp. lime juice
1 Tbsp. toasted sesame seed (optional)

Instructions
For Shrimp
  • Marinate the shrimp with lime juice and salt for 15 minutes.
  • Heat enough oil for deep frying, coat shrimp with egg white followed by corn starch, then deep fry until pink, around 1-2 minutes, remove and drain on paper towel to absorb excess oil.
  • Tips: shrimps cook really fast, so pick them up as soon as they turn pink to get the desired crunchy texture.
  • Overcooked shrimps have chewy texture, not a desirable result.
Crystal Shrimp Sauce
  1. Mix all sauce ingredients together.
  2. Lightly toss the fried shrimps with the mayonnaise sauce and serve immediately.
