Chicken Eggrolls

CHICKEN EGGROLLS

tsp. vegetable oil
3/4 lb. ground pork
salt & pepper to taste
1 tsp. garlic, minced
1 tsp. ginger, minced
3 c. green cabbage, shredded
1/4 c. green onions, sliced thin
1 Tbsp. soy sauce
1 tsp. toasted sesame oil

1 egg beaten
oil for frying
Instructions
  • Heat the 2 teaspoons of vegetable oil in a large pan over medium high heat.
  • Add the ground pork and season with salt and pepper.
  • Cook, breaking up the pork with a spatula, until meat is browned and cooked through.
  • Add the garlic and ginger then cook for 30 seconds.
  • Stir in the coleslaw mix and green onions.
  • Cook until cabbage is wilted, about 3-4 minutes. 
  • Stir in the soy sauce and sesame oil, then remove from heat.
  • Spoon approximately 2-3 tablespoons of filling onto each egg roll wrapper and fold according to package directions, using the beaten egg to seal the edges of the wrappers as you go. 
  • Pour 2-3 inches of oil into a deep pot.
  • Heat the oil to 350 degrees. Fry 3-4 egg rolls at a time, turning occasionally, until browned all over, approximately 3-5 minutes.
  • Drain on paper towels, then serve with dipping sauce of your choice.
SWEET CHILI DIPPING SAUCE
1/3 c. rice vinegar
1/3 c. water
1/3 c. + 2 tablespoons cane sugar
1 Tbsp. rice wine (can substitute with dry sherry)
1-2 tsp. dried red chili flakes (these tend to be very hot)
      So start with a few and build to the flavor you desire

1-1/2 tsp. garlic. finely minced
1 tsp. ginger, finely minced
1 tsp. tamari or soy sauce
2 tsp. cornstarch (dissolved in 1-Tbsp. water)
      The sauce will thicken as it cools
1-2 drops red food coloring (optional)
Instructions 
  • Place all of the ingredients except for the cornstarch mixture in a small saucepan and bring it to a boil, stirring regularly.
  • Once the sugar is dissolved stir in the cornstarch mixture, stirring continually until thickened, about 1 minute.
  • Let the sauce cool completely, pour into an airtight jar and store in the refrigerator.
  • Will keep for up to a week. Makes about 1 cup.
