Brownies in a Cup

BROWNIES IN A CUP
1/4 c. butter, softened                                    
1/2 c. white sugar
1/2 c. packed brown sugar                               
1 egg
1/2 tsp. vanilla extract                                    
1/2 c. applesauce (I used yogurt or sour cream)
1 c. flour                                                         
1/4 c. unsweetened coco powder
1/2 tsp. baking soda (level)                              
1/4 tsp. ground cinnamon (optional)
1 c. semisweet chocolate chips                         
2 Tbsp. powdered sugar

  • Preheat oven to 350 degrees. 
  • Line muffin cups with paper liners. 
  • In large bowl, beat together butter, white sugar, brown sugar, egg, and vanilla until well blended. 
  • Add applesauce; blend well. 
  • In a separate bowl, stir together flour, coco powder, baking soda, and cinnamon, if desired. 
  • Add to butter mixture, blending well.  Stir in chocolate chips. 
  • Fill muffin cups three-quarters full with batter. 
  • Bake in the preheated oven for 22 minutes or until toothpick inserted in muffin comes out almost clean. 
  • Cool in pan.  Sprinkle with confectioners sugar, if desired. 
  • Serve warm.  Yields 1 dozen muffins.
