Blueberry Muffins

BLUEBERRY MUFFINS
4 eggs
2 c. white sugar
1 c. oil
1 tsp. vanilla extract
2 c. sour cream
4 c. flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
2 c. fresh blueberries (or 1-16 oz. pkg frozen blueberries)
Instructions
  • Preheat oven to 400 degrees.
  • Beat eggs and slowly add sugar.
  • While beating, slowly add oil and vanilla.
  • Mix dry ingredients and add alternately with sour cream to the egg mixture.
  • Gently fold in blueberries.
  • Spoon batter into greased and floured muffin tins or use paper liners.
  • Bake for about 20 minute.  Makes 24 muffins.

Note:  Don't be tempted to add yogurt (instead of sour cream), they don't come out as good.
